Where to find mole rats

Mole rats are some of the easiest creatures to defeat in the wasteland, though note that every time they hit you, they're going to apply a small amount of radiation. Being equipped with Rad-X or Radaway is going to reduce your radiation exposure, or even fix it immediately.
In addition to completing challenges, mole rats provide some resources, such as mole rat meat which can be easily made into edible material, teeth (which can be scraped into bones), and hide (which can be cut into skin). This is the easiest way to get both of these crafting materials.
