A good swordsman but less so than other classes
The Assassin class is often one of the weaker classes called upon during any Holy Grail War, however, due to the sheer power of their rival heroes. Sasaki Kojiro,A legendary samurai, it takes the form of a swordsman, who prides himself on being both respected and technically skilled in swordsmanship.
Although he faces off against Saber, she is in a weakened state and still manages to defeat him. On top of that, the Assassin is essentially a backup servant controlled by the caster. The fact that he can be manipulated by a fellow servant thus speaks to his inferiority.

A strong servant when the situation is right

A fast, skilled fighter hindered by philosophy
Lancer is a skilled servant who shows his abilities in the first battle of the series against Archer. Although the fight is decisive, Lancer shows that he can go toe-to-toe with most other servants.
Although he has survived longer than most servants, Lancer is ultimately weaker than most. As an assassin, he serves in a secondary role beneath Gilgamesh for the Kotomine Kirei. Despite his obvious talent, Lancer offers very little resistance when he finally squares off with the Golden King.

A magic-class servant has a variety of powerful moves

A fearsome and speechless brute, Berserker establishes himself as one of the most powerful servants from his first appearance on the show. Combined with the power of his master, Illya, Berserker is one of the most feared characters among all possible servants.

2 Suede
The ideal servant's power increases throughout the series
Although most masters consider the saber class to be the most powerful and desirable class to summon, the fact that her master is the inexperienced Emiya Shirou puts saber at a great disadvantage for most of the show. Lacking mana, Saber initially defeats both Berserker and Gilgamesh, before the latter regains his full power.
His true identity as an epic hero is that of King Arthur, with much of Saber's power derived from his artifacts: Excalibur, Caliburn, and Avalon. Without these, and an adequate mana supply, she becomes quite vulnerable. But even in his weak state he is able to beat other servants.
1 Gilgamesh
The King of Kings is worthy of his self-proclaimed title
It is probably not fair to call Gilgamesh a servant, since he essentially only serves himself. However, he is the most powerful of the epic heroes and possesses the most powerful weapons and the Noble Phantasm. As the victor of the previous Holy Grail War, Gilgamesh had defeated almost all other class servants before joining the fray a second time.

Able to summon any weapon throughout history through his Gates of Babylon portals, Gilgamesh barely lifts a finger as he rains down hundreds of swords and spears upon his enemies. Saber is the only other servant who can give Gilgamesh any kind of competition, but even he must turn Gilgamesh's own Enuma Elise against him in order to defeat him.
